About the Chef

Stamatis Papazis is chef and owner of the restaurant "Thalasses" Kardamyla Chios. "Already at thirteen, having decided that cooking was something that fascinated him, spent many more hours could in the neighborhood bakery where without realizing he was initiated into the secrets of bakeries and pastry. At seventeen she decided to leave the place of origin and settle in Athens to study at the School Chef d 'Oeuvre, where he graduated with honors a few years later.

In parallel with his studies he worked at Margi House Hotel, initially as an apprentice in the cold kitchen and later as a cook, a chef Lazaros Konstantinidis. The organization and kitchen management and human resources, especially in the banquet department, was the most valuable lesson you learned from the first, most professional, working experience.
He continued as a cook for two years in the restaurant "Left Right" Rouf. There, chef and teacher Chrysanthos Karamolegos broadened his horizons, he followed the stream of creative cooking and developed the capacity of the composition of dishes special dishes and complex menus.

followed one years as a cook in Santa marina hotel in Mykonos, where he met with Italian cuisine, a year in Halkidiki in Sani Beach Resort Hotel as head cook of the pool bar restaurant «Dolphin" hotel and two more years at Okeanis Hotel in Kos, as sou chef, a chef Polykarpos Papouliako.
In 2005 returns to Chios and works as a chef at bel air restaurant. In 2007 he decides to create his own space in his hometown of Kardamyla. Hence one of the best restaurants on the island of Chios, the "Thalasses" restaurant, where he works till today.
